To mark the end of the Week of Italian Cuisine, on Sunday 28 November the Embassy of Italy in Algeria and the Italian Cultural Institute in Algiers will be holding a masterclass on how to make panettone.
The protagonist will be the young Algerian baker Ahmed Nezzar, founder of “Panettone di Ahmed Nezzar”. The programme includes a culinary workshop on how to prepare this typical Italian Christmas sweet cake, and a tasting accompanied by good Italian ice cream. Twenty-six year old Nezzar Ahmed Khireddine holds a degree in Accounting and Taxation, and is the first and only panettone producer in Algeria. Describing his experience he says: “I discovered panettone during my trip to Milan. As I was walking around the streets I suddenly wanted to eat something sweet. I bought the first thing I came across and bingo: it was a mini panettone. Thinking it was some sort of candied fruit cake, I was surprised by its special taste and texture. Being a pastry enthusiast, I decided to reproduce it back home in Algeria. I was surprised by the technicalities of making it. I have been testing, researching, and tasting it for a year now. That was how I created my first panettone.”
